  1. Heat olive oil in a pot on medium heat. Cook the onion in the olive oil until translucent, 5-7 minutes.
  2. Add garlic and parsley, stirring to combine. Then add mussels, white wine, and pepper. Bring to a boil, then reduce heat to low and cook covered, 10-12 minutes. Mussels are finished when they are open (discard any that aren't).
  3. Add spices and breadcrumbs, if desired. Serve on a deep plate with toast or baguette.
Recipe Notes

Some recipes call for tomatoes and sugar, but this seems to work without it. It doesn't seem to require any additional salt... there's enough in the shells.
